Garlic scapes are truly a seasonal treat. You simply cannot get fresh, green garlicky goodness at any other time of the year. These can only be harvested by hand. Straight from the field to your table, truly a farm to fork experience. Don't miss it!
Garlic scapes have a lovely, mild garlic flavor that are very versatile in the kitchen. We have been including them in our CSA for years and our members highly enjoy this delicacy traditionally used in Asian and European recipes. Due to their seasonality ~ availability is limited! Garlic scapes freeze so well, it’s easy to use them throughout the year. Scapes make an excellent pesto!
Garlic scapes are the flower stalk that grows out of the center of the garlic plant. The scape is snapped off to direct the energy in the plant to develop a healthier and larger bulb which will be harvested in July.
Our garlic scapes are:
- Certified organic
- Hand harvested on our small family farm
- Shipped just picked the next day
- pleasantly garlic flavored; and may be used in place of chives
- truly seasonal and only available mid-late June
- easily adapted to freezing, pickling and dehydrating
- fresh for a month or more in your refrigerator
- savory addition to any recipe you need garlic or chives
- perfect for stir-frying, egg dishes and pestos
- tender and delicious, a true culinary treat
The scapes keep well in the refrigerator for up to a month. Just put them into a paper bag and fold the top down to keep them from drying out. Simply wash them and pat dry with a paper towel and cut off 1/2 inch from the cut end. They can be used in stir fry, sautéed like green beans, steamed with lemon as a side dish or chopped into any salsa or dip.
