Zemo is a standout in both the kitchen and the field. This porcelain hardneck variety is known for its large, easy-to-peel cloves, long storage life, and strong cold-climate performance. Originally from the Republic of Georgia, Zemo has gained popularity among chefs and growers alike for its high allicin content, disease resistance, and reliably rich flavor.
Whether raw or roasted, it holds its own: sweet and spicy with a clean finish when raw, and deeply buttery and mellow when cooked. It’s a favorite for making black garlic, and versatile enough for sautés, sauces, marinades, and simmered dishes.
No wonder it was selected as one of Cook’s Illustrated's top garlics in a national taste test.

Shipping Information:
All garlic ships via USPS Priority Mail. Local pickup is not available. Because garlic is harvested and cured over several weeks, we’re unable to schedule exact pickup dates. And as the fall season ramps up, our crew shifts into essential fieldwork with a leaner team.
Orders will begin shipping the week of September 22.

Note on Yellow Aster Phytoplasma:
We do our best to identify and cull bulbs that may show signs of yellow aster phytoplasma, a disease that can cause distorted or weak garlic growth. That said, early symptoms can be subtle, and final determination isn’t always possible at harvest.
